Cured Cheese with Rosemary Pago "Los Vivales" is made with 100% raw sheep's milk, without any type of preservative.
Smooth, fine and hard rind, covered with butter and rosemary leaf, when cut, good texture with some mechanical eyes. Color of the white-ivory paste, uniform and without a dark border close to the rind, buttery flavor with reminiscences of hazelnut. Intense lipolysis where flavors of fatty metabolic acids characteristic of diacetyl and acetoin are appreciated. Intense aftertaste where touches of rosemary appear. Slightly lactic, firm but melting cheese.
