An aged cheese made in Valladolid with 100% raw sheep's milk following the ancestral tradition of Castilian shepherds. Matured for a minimum of eight months in cellars, it is carefully turned, brushed, and bathed in oil three times during its aging, which gives it an intense, deep, and slightly spicy flavor, as well as a firm and aromatic texture.
