The Salchichonal Ruca 150 g is a professional blend of additives, spices, and seasonings designed for making cured salchichón using traditional methods. Ideal for artisanal charcuterie, it allows you to achieve a product with authentic and balanced flavor.

This preparation is intended for making up to 5 kg of salchichón, with a curing process longer than 30 days.

INGREDIENTS:
Salt, spices (pepper, nutmeg), dextrose, diphosphates E-450 (stabilizer) and polyphosphates E-452 (stabilizer), sodium citrates E-331 (antioxidant), potassium nitrate E-252 (preservative), sodium ascorbate E-301 (antioxidant).

USAGE INSTRUCTIONS: 
The meats should be aired and cold, preferably pork; if desired, 25% beef can be added. You can also add, as decoration, 50 grams per kilo of hard bacon cut into cubes.

Once the meats are ground as usual, weigh them and add one packet per 5 kilos of meat (according to the packet). Knead afterward until a homogeneous paste is obtained, then let it rest for two to twelve hours. Stuff preferably into pork cecum casing or, if unavailable, thinner pork or beef casing. When stuffing, make sure the casing is tight and free of air pockets.

Once stuffed, hang the casings in a cool, draft-free place until fully cured.
